How we choose our ingredients

Good cooking starts long before the kitchen. We work with a small number of growers and suppliers, visit them when we can and build the menu around what is best that week.

What we look for

• Produce picked for flavour, not shelf life
• Suppliers we can call by name
• Less waste — we use whole ingredients
